Ingredients

  • 200 g Pre-cooked couscous
  • 400 g Chicken, diced
  • 150 g Whole Bella di Cerignola Olives
  • 250 g Zucchini, diced
  • 250 g Carrots, diced
  • Onion, to taste, chopped
  • 2 Tablespoons Organic Extra Virgin Olive Oil
  • Curry powder, to taste
  • Turmeric, to taste
  • Salt and pepper, to taste

Instructions

Cook the Chicken and Vegetables:
1. In a pan, heat a bit of Organic Extra Virgin Olive Oil and cook the chicken pieces until golden brown.
2. Add the chopped onion, zucchini, carrots, Whole Bella di Cerignola Olives.
3. Sauté until the vegetables remain crisp.

Prepare the Couscous:
4. Place the couscous in a bowl and measure an equal amount of water.
5. Bring the water to a boil and gradually pour it over the couscous, stirring to combine.
6. Add curry powder and turmeric, mixing well for two minutes.

Combine and Serve:
7. Combine the vegetable mixture, chicken, and couscous, mixing everything together.
8. Serve warm or cold.
