Ingredients
- 120g Pizza Sticks
- 4 Chicken Breasts (about 200/250 g each)
- 500 g Cherry tomatoes
- 80 g Drained Calabrian Olive MOSAIC
- 80 g Butter
- 1 Garlic clove
- 1 Lemon
- Parsley, to taste
- Thyme, to taste
- Marjoram, to taste
- Salt, to taste
- Organic Extra Virgin Olive Oil, to taste
Instructions
Prepare the Pizza Stick Crust:
1. Finely chop the Pizza Sticks.
2. In a bowl, combine the chopped Pizza Sticks, cubed butter, aromatic herbs (parsley, thyme, marjoram), and salt.
3. Mix with your hands until you get a crumbly mixture.
Prepare the Chicken:
4. Preheat the oven to 200°C (392°F).
5. Sprinkle the crumbly mixture over the chicken breasts, pressing it down with your hands to make it stick.
6. Drizzle with a bit of Organic Extra Virgin Olive Oil and a pinch of salt.
Prepare the Cherry Tomatoes:
7. Season the cherry tomatoes with Organic Extra Virgin Olive Oil, salt, and herbs.
8. Cut the cherry tomatoes in half, if desired
Bake:
9. Place the chicken breasts and seasoned cherry tomatoes in a baking dish.
10. Add the drained Calabrian Olive Mosaic on top of the mixture.
11. Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and the topping is golden brown.
Serve:
12. Once cooked, plate and enjoy the chicken while hot.
13. Garnish with lemon slices and fresh parsley if desired.
