Ingredients

For the pancakes:

  • 200 g Flour
  • 2 Tablespoons sugar
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon baking soda
  • 1/4 Teaspoon salt
  • 2 Eggs
  • 250 ml Coconut milk
  • 50 g Melted butter

For the cream:

  • 150 g Cocomy
  • 100 ml Fresh cream

Instructions

Prepare the pancakes:
1. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, whisk the eggs, coconut milk, and melted butter.
3. Combine the wet and dry ingredients and mix until smooth.

Cook the pancakes:
4. Heat a non-stick skillet and lightly grease it.
5. Pour a ladle of batter into the skillet and cook until bubbles form on the surface, then flip and cook until golden.
6. Repeat with the remaining batter.

Prepare the cream:
7. Whip the fresh cream until soft peaks form and gently mix it with the Cocomy.

Serve:
8. Serve the pancakes warm with a generous spoonful of coconut cream.
