Ingredients

• 200 g pre-cooked couscous
• 400 g chicken
• 150 g Bella di Cerignola olives
• 250 g zucchini
• 250 g carrots
• Onion (to taste)
• Olive oil (to taste)
• Curry powder (to taste)
• Turmeric (to taste)
• Salt (to taste)
• Pepper (to taste)

Instructions

Prepare the Vegetables:
1. Finely chop the onion, and cut the zucchini and carrots into small cubes after washing and peeling them.

Cook the Chicken and Vegetables:
2. Cook the chicken pieces in a pan with a bit of oil until golden brown.
3. Add the vegetables and Bella di Cerignola olives. Sauté until the vegetables remain crisp.

Prepare the Couscous:
4. Place the couscous in a bowl. Measure an equal amount of water as couscous.
5. Bring the water to a boil and pour it over the couscous gradually, stirring to combine.
6. Add curry powder and turmeric, mixing well for two minutes.

Combine and Serve:
7. Combine the vegetable mixture, chicken, and couscous, mixing everything together.
8. Serve the dish warm or cold.
