Ingredients

  • 2 Eggplants
  • 1 Can Italian Peeled Tomatoes
  • 200 g Mozzarella
  • 50 g Grated Parmesan cheese
  • 2 Garlic clove
  • Organic Extra Virgin Olive Oil, to taste
  • Salt and pepper, to taste
  • Fresh basil, to taste

Instructions

Prepare the Eggplants:
1. Slice the eggplants and grill them until they are tender and have grill marks.

Cook the Tomato Sauce:
2. In a pan, heat some Organic Extra Virgin Olive Oil and sauté the chopped garlic until fragrant.
3. Add the Italian Peeled Tomatoes, salt, and pepper, and cook for 10 minutes, breaking up the tomatoes with a spoon.

Assemble the Dish:
4. In a baking dish, layer the grilled eggplants, tomato sauce, mozzarella, and Parmesan cheese.

Bake:
5. Preheat the oven to 180°C (356°F).
6. Bake the assembled dish for 20 minutes, until the cheese is melted and bubbly.

Serve:
7. Garnish with fresh basil leaves and serve hot.
