Ingredients
- 400g Linguine con Archetto
- 800g Lamb shoulder, diced
- 4 Carrots, diced
- 4 Celery stalks, diced
- 2 Onions, diced
- 800g Tomatoes Puree
- 2 Cups Red wine
- 4 Tablespoons Organic Extra Virgin Olive Oil
- 4 Sprigs Fresh rosemary
- Salt and pepper, to taste
Instructions
Prepare the Sauce:
1. In a large pot, heat Organic Extra Virgin Olive Oil and sauté carrots, celery, and onion until soft.
2. Add the lamb and brown on all sides.
3. Pour in red wine and let it reduce.
4. Add Tomatoes Puree, rosemary, salt, and pepper.
Simmer the Sauce:
5. Simmer for 2 hours until the lamb is tender.
Cook the Pasta:
6. Cook the linguine con archetto according to package instructions.
Combine and Serve:
7. Toss the pasta with the lamb ragù and serve hot.
