Ingredients
• Pasta (penne or spaghetti)
• Pitted and halved Nocellara del Belice olives
• Cherry tomatoes
• Anchovy fillets
• Garlic
• Olive oil
• Chili pepper
• Fresh parsley
• Salt
Instructions
Cook the Pasta:
1. Cook the pasta in plenty of salted water until al dente. Drain and set aside.
Prepare the Sauce:
2. In a pan, heat the olive oil and sauté the garlic and chili pepper until fragrant.
3. Add the anchovy fillets and let them dissolve in the oil.
Add Vegetables:
4. Add the halved cherry tomatoes and cook for a few minutes until they start to soften.
5. Add the Nocellara olives and mix well.
Combine with Pasta:
6. Drain the pasta and toss it with the sauce, adding chopped fresh parsley.
7. Mix well to ensure the pasta is evenly coated.
