Ingredients

  • 4 Salmon fillets
  • 1 Cup Calabrian Olive Mosaic, halved
  • 1 Cup cherry tomatoes, halved
  • 2 Garlic cloves, minced
  • 1/4 Cup Organic Extra Virgin Olive Oil 
  • 1/2 Cup dry white wine
  • Juice of 1 lemon
  • Fresh thyme sprigs
  • Salt and pepper, to taste

Instructions

Prepare the Salmon:
1. Preheat the oven to 200°C (400°F).
2. In a large skillet, heat the Organic Extravirgin Olive Oil over medium-high heat. Add the salmon fillets and sear until golden on both sides. Remove the salmon from the skillet and set aside.

Cook the Sauce:
3. In the same skillet, add the minced garlic and sauté for 1 minute.
4. Add the Calabrian Olive Mosaic and cherry tomatoes, and deglaze with white wine. Cook until the liquid is reduced by half.
5. Add the lemon juice and mix well.

Bake the Salmon:
6. Return the salmon fillets to the skillet and bake in the preheated oven for 10-15 minutes, or until the salmon is cooked through.

Serve:
7. Serve hot, garnished with fresh thyme sprigs, accompanied by steamed vegetables or a simple green salad.
