Ingredients

  • 4 Eggs
  • 1 Can Diced Peeled Tomatoes, drained
  • 1 Onion, chopped
  • 2 Tablespoons of grated Parmesan cheese
  • Organic Extra Virgin Olive Oil, to taste
  • Salt and pepper, to taste

Instructions

Prepare the Onion:
1. In a pan, heat some Organic Extra Virgin Olive Oil over medium heat and sauté the chopped onion until it’s soft and translucent.

Cook the Tomatoes:
2. Add the drained Diced Peeled Tomatoes to the pan with the onion and cook for about 5 minutes, stirring occasionally.

Beat the Eggs:
3. In a bowl, beat the eggs with the grated Parmesan cheese, salt, and pepper.

Cook the Frittata:
4. Pour the egg mixture into the pan with the Diced Peeled Tomatoes and onion. Cook over medium heat until the eggs are set, about 8-10 minutes.

Serve:
Serve the frittata hot or at room temperature.
