Ingredients
- 2 Zucchini, sliced into rounds
- 1 Red Bell pepper, cut into strips
- 1 Yellow Bell pepper, cut into strips
- 1 Red Onion, sliced into wedges
- 2 Tablespoons Organic Extra Virgin Olive Oil
- Salt and pepper, to taste
- 3 Tablespoons Truffle sauce
- Fresh basil or parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
Prepare the Vegetables:
1. Preheat your grill to medium-high heat.
2. In a large bowl, toss the sliced zucchini, bell peppers, and onion with Organic Extra Virgin Olive Oil, salt, and pepper.
Grill the Vegetables:
3. Place the vegetables on the grill and cook for 3-4 minutes on each side, or until they are tender and have nice grill marks.
Add Truffle Sauce:
4. Remove the vegetables from the grill and transfer them to a serving platter.
5. Drizzle the Truffle sauce over the grilled vegetables.
Garnish and Serve:
6. Garnish with freshly chopped basil or parsley.
