Ingredients
• 2 cans tuna in oil (or canned tuna)
• 1 cucumber
• 1 red bell pepper
• 1 red onion
• 150 g cherry tomatoes
• 50 g pitted black olives
• 100 g Mini Chomps sesame and poppy seed crackers
• Mixed salad greens (lettuce, arugula, spinach, etc.)
• Extra virgin olive oil
• Lemon juice
• Salt and pepper
Instructions
Prepare the Tuna and Vegetables:
1. In a large bowl, drain the tuna and flake it with a fork.
2. Slice the cucumber, red bell pepper, red onion, and cherry tomatoes.
3. Add the sliced vegetables to the bowl with the tuna.
4. Add the pitted black olives.
5. Add the Mini Chomps crackers to the bowl with the other ingredients.
Dress the Salad:
6. Dress the salad with a drizzle of extra virgin olive oil and the juice of half a lemon.
7. Season with salt and pepper to taste and mix well to distribute the dressing evenly.
Serve:
8. Arrange the mixed salad greens on a serving plate.
9. Top with the prepared tuna salad.
10. Serve as an appetizer or main dish.
